Recipe: Veggie Stir-Fry

I posted this photo on my Facebook the other day, and it went bonkers.


This was a recipe I made a couple days after the 4th time I did the 3-Day Refresh, and it was inspired by the Refresh. Here’s the recipe:

👌 1 tbsp organic extra-virgin coconut oil

👌 1 clove garlic

👌 1 tsp grated fresh ginger

👌 1.5 cups organic broccoli

👌 20 organic baby carrots

👌 1 yellow squash

👌 1 small tomato or 10 grape tomatoes

👌 1/2 tsp Himalayan salt

👌 Few splashes of organic vegetable broth

1. Heat oil in wok over medium heat; add garlic and ginger. Don’t get wok too hot, or garlic will burn.

2. Cook, stirring frequently, for 1 to 2 minutes or until fragrant.

3. Add broccoli, carrots, squash, salt, and broth. If any of your veggies are frozen, you may want to add them a few minutes before adding the fresh ones. Cook 5-7 minutes, or until vegetables are tender-crisp.

4. Add the tomatoes, and continue cooking 2-3 minutes. Serve and enjoy!
