Organic Greens Salad with Fried Tempeh

I made this salad recently for lunch the day after Christmas and just had to post it.  It was so good!

Organic Greens Salad with Fried Tempeh

Organic Greens Salad with Fried Tempeh

– Organic greens
– Organic raisins
– Organic red, yellow, green, etc. peppers
– Organic pumpkin seeds
– Organic broccoli and/or other veggies
– Chia seeds, flax meal
– Himalayan salt, pepper
– 1/3 cup Daiya mozzarella shreds
– 1-2 tbsp organic olive oil + 1-2 tbsp organic red wine vinegar

Heat 1/4″ of organic or Italian extra virgin olive oil in a pan on medium heat. Cut organic tempeh into 1″ squares. Lightlife ( is my favorite brand and can be found at Whole Foods or Kroger’s health foods section.  There are several “flavors” including soy, flax, grain, and there’s even a tasty “smokey tempeh bacon” flavor.  Add tempeh to pan, being careful not to splash the oil and burn yourself.  Brown tempeh on one side, then turn individual squares or strips to brown the other side.  If necessary, pat with a paper towel to remove excess oil.

Toss tempeh with above ingredients. Serve.
